Peanut butter mousse made from aquafaba. A delicious low carb, low sugar treat without any guilt that still satisfies a sweet tooth.
Peanut Butter Mousse with Pistachio Crumble
Drain aquafaba (liquid) from can of chickpeas into a bowl.
Add Cream of tar tar to liquid.
Using a hand or standing mixer, mix on low to medium speed for about 1 minute until mixture is frothy. Then increase speed to high until mixture is whipped to a peak (about 6-8 minutes)
During high mixing, add peanut butter and sugar replacement to mixture. Do not over mix or mousse will deflate. Once whipped to a peak mousse is complete.
Plate and top with crushed pistachios.
