Peanut Butter Mousse with Pistachio Crumble

  • 1 can aquafaba (juice in chickpea can)
  • 1/2 Tsp Cream of Tar Tar
  • 2 Tbs natural powdered peanut butter
  • 3 Tbs Confectioners sugar replacement
  1. Drain aquafaba (liquid) from can of chickpeas into a bowl.
  2. Add Cream of tar tar to liquid.
  3. Using a hand or standing mixer, mix on low to medium speed for about 1 minute until mixture is frothy. Then increase speed to high until mixture is whipped to a peak (about 6-8 minutes)
  4. During high mixing, add peanut butter and sugar replacement to mixture. Do not over mix or mousse will deflate. Once whipped to a peak mousse is complete.
  5. Plate and top with crushed pistachios.
