Harvest Salad

The best salad to make your own and when in a time-crunch.

Total Time: 35 min

Ingredients:

  • 3/4 bag of arugula (Trader Joe’s)

  • 3/4 bag of baby kale (Trader Joe’s)

  • 3/4 bag of diced Butternut squash (trader Joe’s)

  • 1 container or 1/2 fresh pomegranate arils

  • 1/4 cup almonds, chopped

  • 1/4 cup walnuts, chopped

  • 1 granny smith or honey crisp apple, chunked

  • 1/4 cup cilantro, chopped

  • 1 cup quinoa

  • 1 cup extra virgin olive oil

  • 1/4 cup pomegranate balsamic

  • 1/4 cup maple balsamic


Instructions

  1. Preheat oven to 400°F. On a baking sheet, evenly spread butternut squash and drizzle with 2 TBS extra virgin olive oil. Bake until soft about 25 minutes.

  2. In a medium sauce pot, prepare quinoa according to package.

  3. In a mixing cup, combine 2/3 cup of extra virgin olive oil and both types of balsamic and whisk until well blended.

  4. Combine all ingredients in a large mixing bowl or salad bowl, dress, and enjoy!
