Easy African Peanut Stew

One of my favorite recipes that I pulled together simply from looking at ingredients in my pantry! This soup is vegan, super filling and if using an instant pot, takes minimal time to make.

Cook Time: 35 min
Total Time: 50 mins

Ingredients:

  • 4 quarts of vegetable stock

  • 2 sweet potatoes, peeled and cubed

  • 1 yellow onion, diced

  • 1 cup no added sugar peanut butter

  • 5-9 cloves of garlic, minced

  • 2 1/2 tsp ginger

  • 1 tsp cayenne pepper

  • 2 tsp cumin

  • 1 tsp onion powder

  • 1 1/2 tsp salt

  • 1/4 tsp pepper

  • 2 tsp curry powder

  • 1 15 oz can of crushed tomatoe


Instructions

  1. Dice the onion and put in instant pot on saute setting for about 6 minutes

  2. Add in minced garlic to the onion and saute 2 more minutes, until fragrant

  3. While onion and garlic are cooking, peel and dice the sweet potatoes

  4. Turn off the saute function on your instant pot and add in all other ingredients

  5. Mix all ingredients, then seal instant pot and set for 4 minutes high pressure. Once done, allow the instant pot to naturally steam for 10 minutes

  6. Remove pot from instant pot and use an immersion blender to mix into a thick stew

  7. bowl up your soup and add toppings! I add tons of cilantro, dry roasted peanuts, and chickpeas that I mix with olive oil, curry powder and salt and roast at 425 for 20 minutes
