Fuel Well Farro Bowl

Nutrient-packed, clean ingredient bowl to keep you satisfied to beat those after dinner cravings!

Ingredients:

  • 1 medium white onion

  • 1 package of Trader Joe’s shaved Brussel sprouts

  • 1 pouch of Trader Joe’s fresh shelled edemame

  • 4 TBS extra virgin olive oil

  • 1 cup Trader Joe’s 10 minute farro

  • Balsamic glaze, to drizzle

  • Salt

  • Pepper

  • Trader Joe’s micro-greens (optional)


Instructions

  1. Preheat oven to 400°F. On a baking sheet, season one package of Trader Joe’s shaved Brussel sprouts with salt, pepper, and about 1 TBS extra virgin olive oil. Once oven is preheated, roast Brussel sprouts fro about 20 minutes, or until browned.

  2. Dice medium white onion and sauté with 2 TBS of extra virgin olive oil until translucent and fragrant. Remove from heat and set aside.

  3. In a small sauce pot, boil 1 cup of Trader Joe’s 10 minute farro. Once cooked, drain and set aside in a bowl.

  4. Use the final TBS of extra virgin olive oil to sauté pouch of Trader Joe’s fresh shelled edamame until browned. remove from heat and set aside.

  5. Once all items are cooked, combine in a bowl. Top with desired amount of micro-greens, a drizzle of balsamic glaze, and salt and pepper to taste.
