Honey Garlic Salmon with Black Rice

A family favorite in my house!

Total Time: 45 min

Ingredients:

  • 1 pound of wild caught salmon (enough for 3-4 people)

  • 4 TBS garlic; minced

  • 1 TBS honey

  • 2 TBS grass-fed garlic and herb butter (Kerrygold is a great option)

  • 1 TBS low sodium soy sauce

  • 1 TBS sesame oil

  • 1 cup black rice


Instructions

  1. Preheat oven to 450°F.

  2. In a medium saucepan, cook black rice as indicated on packaging.

  3. Cut salmon in bite-sized pieces and remove skin

  4. In a medium mixing bowl, add garlic, melted butter, honey, low-sodium soy sauce, and sesame oil. Mix thoroughly.

  5. Add salmon to bowl and coat with mixture evenly. place on a baking sheet and into oven for about 7-14 minutes.

  6. Fluff rice with a fork.

  7. Plate and serve.
