Fuel Well Zucchini Boats

Easy dish that is fun for the whole family.

Ingredients:

  • 1 lb ground turkey or chicken

  • 4 medium zucchini

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1 cup part-skim ricotta

  • 1/4 cup parmesan cheese

  • 3/4 cup shredded mozzarella

  • 1 TBS garlic olive oil

  • 1 TBS Extra virgin olive oil

  • 1 jar red pepper pesto sauce

  • Salt and pepper; to taste


Instructions

  1. Wash and cut zucchini in half lengthwise and scoop out middle to form a boat.

  2. Place scooped zucchini into a mesh colander and push with the back of a spoon to remove excess moisture. Set aside in a mixing bowl.

  3. In the meantime, sauté poultry in garlic infused olive oil, salt, and pepper to taste. Set aside.

  4. In the same bowl as the drained zucchini, add garlic powder, onion powder, parmesan cheese, ricotta, and 1/4 tsp salt. Mix thoroughly.

  5. Take cooked poultry and place in the bottom of the boat. Top with mixture in the bowl. For the final two layers add red pepper pesto sauce and sprinkle with mozzarella cheese.

  6. Cook in oven for 20 minutes at 400°F or use an air fryer.

  7. Drizzle with olive oil and serve.
