Fuel Well Turkey Meatballs

Savory dish for lunch or dinner.

Ingredients:

  • 1 lb dark meat ground turkey

  • 3 TBS chopped Italian parsley

  • 1 large shallot; minced

  • 1/2 tsp garlic salt

  • 1 TBS garlic powder

  • 1 TBS Onion powder

  • 1 tsp oregano

  • 1 TBS extra virgin olive oil

  • 1 TBS grass-fed butter

  • 1/4 cup pecan meal

  • 1/4 cup parmesan cheese

  • Salt and pepper; to taste


Instructions

  1. Preheat oven to 375°F.

  2. In a sauce pan over medium heat, sauté shallots in extra virgin olive oil and butter until fragrant and translucent.

  3. In a medium mixing bowl, add all other ingredients and combine thoroughly.

  4. Form into small balls and place on a baking sheet, bake for 20- 25 minutes or until internal temperature is at 165°F.

Chef’s note: serve with lemon arugula salad.
