Vegan Grain Free Sugar Free Chocolate Chip Cookies

This delicious and healthy sweet treat has no grains, no dairy, and no eggs. The secret ingredient in these yummies is tahini, which I used in place of butter or oil!

Ingredients:

  • 3 cups almond Flour

  • 1 1/2 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp salt

  • 1/2 cup melted coconut oil

  • 6 Tbs water

  • 2 tsp vanila extract

  • 3/4 cup swerve brown sugar

  • 1/4 King Arthur baking sugar alternative

  • 1 cup Lilys stevia sweetened chocolate chips

  • 1/2 cup tahini paste


Instructions

  1. preheat oven to 374 degrees (or 400 degrees if baking at high altitude)

  2. mix all dry ingredients in bowl and set aside

  3. using a mixer, mix water, vanilla, coconut oil, tahini together until smooth

  4. add the sugars into the wet mix and mix for 2 minutes

  5. add dry ingredients to wet mixture, mix for two minutes until formed.

  6. mix in the chocolate chips

  7. place on baking sheet lined with parchment paper and bake for 8 minutes. Flatter with a flat spatula and continue to bake until corners are brown
