Blueberry Protein Muffins

High-protein, low-sugar muffins to fuel the entire family.

Ingredients:

  • 3 eggs

  • 1 egg white

  • 2 cups almond flour

  • 1/2 cup keto flour blend; optional (you can just use all almond flour)

  • 3 TBS of sugar substitute (I use swerve)

  • 1.5 tsp salt

  • 1/4 tsp baking soda (1/2 if only using almond flour)

  • 1-1/2 tsp baking powder

  • 1/2 melted butter

  • 1/2 cup almond milk

  • 1 tsp vanilla extract

  • 6 oz fresh blueberries

  • 1 Quest Nutrition Crispy Blueberry Cobbler Hero protein bar or one Quest Blueberry Muffin Protein bar; chopped finely


Instructions

  1. Preheat oven to 350°F.

  2. Combine all dry ingredients into a medium mixing bowl and mix thoroughly.

  3. Add all wet ingredients into same bowl and mix again until well combined.

  4. Fold in blueberries to the batter.

  5. In a greased muffin tin, add batter to each tin about 1/4-1/2 full. If using protein bar, sprinkle a little over each muffin.

  6. Place in oven and bake for 20-25 minutes or until pierced with a fork and no batter can be see on fork.
